What fudys are: the My Pasta My Art system explained

By Jose Andrés

Co-founder of My Pasta My Art, a fresh artisan pasta restaurant in Malasaña (Madrid).

If you searched for «fudys» and got here, the short answer is this: fudys are the fresh ingredients with which each person personalises their pasta dish at My Pasta My Art, in Malasaña (Madrid). The word is ours. The system too.

What exactly is a fudy?

A fudy is an individual ingredient — a cheese, a vegetable or a protein — added to the pasta dish each diner composes. They aren't decorative toppings: they are the part of the dish where the diner decides. Each fudy has its price, from €1.90, and they combine without limit.

Fudys are divided into three families:

Cheeses: burrata (€3.90), parmesan, pecorino, gorgonzola, mozzarella, taleggio, goat cheese, emmental — from €1.90 to €3.90.

Proteins: guanciale, prawns, poached egg, spicy salami, longaniza, chorizo, bacon, cuttlefish, chicken and Heura for the vegan option — from €2.30 to €3.50.

Vegetables: sun-dried tomatoes in EVOO, caramelised onion, sautéed mushrooms, cherry tomatoes, olive mix, broccoli, chilli, red onion — from €1.90 to €2.50.

How does the system work?

The dish is composed in three steps. First, the homemade sauce: eight options, from the Original Carbonara (€14.90) to the Santo Pesto or the Cacio e Pepe (€13.90); the sauce price includes the pasta. Second, the fudys: as many as you want, from €1.90 each. Third, the type of pasta: spaghetti, tagliatelle, rigatoni, trottole, fusilli or gluten-free penne, all made by hand that same day in our workshop.

The result: two people at the same table never eat the same dish, unless they want to.

Where does the word come from?

At first they were ingredients. But ingredient is a kitchen word, and My Pasta My Art needed a word of authorship. From joining food and you, fudy was born: the food and you.

It isn't an Italian word and it doesn't pretend to be. It's ours. It names what you choose so that a pasta stops being a possible combination and becomes yours. The sauce expresses the central emotion; the pasta, the way you move; the fudys, the nuances of your character.

A fudy isn't added: it's chosen. It doesn't complete the dish: it signs it. If it had to fit in one line, it would be this: fudys are the ingredients with which you sign your pasta.
